Feta is a tasty addition to your morning fried eggs. Sprinkled into the pan to melt and crisp up before popping your egg in, trust us, it’s a welcome addition to any breakfast.

Ingredients

  • 2 free range eggs.
  • 1 x 200g pack Mainland Creamy Feta
  • 2 slices of sour dough
  • 2 teaspoons of chilli crisp (or chilli oil)
  • 1 avocado, peeled, halved and thinly sliced
  • 2 tablespoons thinly sliced spring onions
  1. Begin by toasting your sough dough, then top with the sliced avocado. 
  2. Place a large non-stick fry pan on a medium heat. Add a splash of olive oil then take 80g of feta, and crumble it into two rings in the pan. Let it melt and crisp up slightly, then crack your eggs into each ring and cook until golden and crispy. Just before removing, drizzle each egg with some chilli oil, for a little heat. 
  3. Place each egg on top of your avocado topped sour dough, crumble over a little more feta, a twist of pepper then garnish with the spring onions and you’re ready to go.
